Super Speedy Porridge

Its cold - very cold. Porridge, warming soothing & cheap. There is even a porridge cafe!

 

– 2/3 of a cup of oats (100g)

– 2/3 of a cup of boiling water (200ml)

-1/3 of a cup of almond milk (100ml)

Optional

– Banana

– Berries

– Almond butter

– Pumpkin seeds, sunflower seeds and cacao nibs

Start by placing the oats in a saucepan with the boiling water, stir it together and then let it sit with the lid of the pan on for 10 minutes.

Once the oats have soaked and are soft, place the pan on a hob and heat it up with the almond milk for 3-4, stirring it every minute or so.

Then serve with your favourite toppings.

Austrian Apple strudel

Hello to all Zebra tenants and families.

This is a perfect recipe for those winter evenings with a big mug of coffee.

 

The recipe for Mary Berry Apple strudel is very similar to my mother’s own. The combination of brushed butter filo pastry and the cooking apples creates a delicious traditional strudel. I recommend it warm from the oven with plenty of whipped cream.

Mary Berry - APPLESTRUDEL RECIPE

Ingredients

 

4 X Sheets of filo pastry (if frozen defrost first)

60g butter melted

30g white breadcrumbs

15g flaked almond

Icing sugar for dusting

 

FILLING

750g Cooking apples – quartered, cored, peeled and sliced

Grated zest and juice of 1 lemon

3 tablespoons of light brown sugar

½ teaspoon ground mixed spice

½ teaspoon cinnamon

125g sultanas

60g blanched almonds – roughly chopped

 

How to make

  1. 1.Make the filling: mix together the apples, lemon zest and juice, sugar, mixed spice, cinnamon and sultanas, almonds
  2. 2.Lightly brush 1 sheet of filo pastry with melted butter. Cover with the remaining sheets, brushing each sheet with butter. Add the filling leaving a clear edge all around of approximately 6cm. Fold in side edges then roll the filo towards you. I have found that placing the filo first on a clean tea-towel and the roll toward you make this easier.
  3. 3.Once the filo is rolled brush the strudel with the remaining melted butter and sprinkle with almonds. Bake in a preheated oven at 170o fan oven, bake for 40-45 minutes, then dust with icing sugar. Serve warm or cold.
